Christmas Bimi® Bowl with red cabbage salad, mashed potatoes and nut crunch

Method

Preheat the oven to 180°c. Boil the potatoes for about 20 minutes. Then drain the water and add the butter, cream, nutmeg, salt and pepper. Mash everything into a puree.

Blanch the Bimi® Broccoli in boiling water for 2 minutes and then place on a baking tray lined with baking paper.

Mix together all the ingredients for the marinade and brush onto the Bimi® Broccoli with a pastry brush. Roast the Bimi® Broccoli in the oven for approx. 15minutes.

Chop the red cabbage finely and place in a large bowl with the remaining ingredients. Then mix the salad really well with your hands (rubber gloves are great for this).

For the nut crunch, chop the nuts coarsely and mix with the remaining ingredients in a small bowl. Put everything in a pan and roast for approx. 2 - 3 minutes until the nuts turn slightly brown. Allow the nut crunch to cool briefly.

Arrange all the ingredients in a large bowl and add toppings as desired.
