Tidy up the kitchen beforehand. If you’re using a pasta machine, you need as much space as possible to roll out your pasta thin enough. Once that’s done, clamp your pasta machine to the work surface.

Buy some good flour and the freshest eggs. We recommend what is called Tipo 00 flour, which is very finely sieved.

Use 100g of flour for every egg to make the quantity you need. 100g of fresh pasta is enough for one as a main course.

Once you’ve mixed your eggs and flour it’s really important to knead your pasta dough so that you can get the best al dente experience in your first bite.
