Crispy Bimi® Broccoli with Goat Cheese Dip

The Danish twins Laura and Christine, better known as @twinfood simply love the snacks which are easy to prepare but still can impress, without needing to spend several hours in the kitchen. This time, they have used these delicious Bimi®broccoli as the main ingredient in these crunchy Bimi® broccoli’s with goat cheese dip.

We have taken Bimi® broccoli and wrapped them in serrano ham and filo pastry. Then we put them in the oven, to give the Bimi® broccoli the perfect consistency and to make sure that the filo pastry would get nice and crispy. when they are almost done, you can, advantageously, turn on the grill function and make them even more crunchy. But be careful, because it happens fast!!

We think that a snack like this deserves to be served with an equally delicious dip. Therefore, did we also bake a goat cheese dip, and we have to mention, that if you like goat cheese, then you simply HAVE to try this dip. It is primarily consisting of goat cheese and cream cheese blended and then baked in the oven. It is a delicious dip, which also can be served with other dishes. Though, we think that it very well compliments the green from the Bimi® broccoli, serrano ham and the crispy from the filo pastry. All in all, a tasteful snack, that you can serve at most occasions. For example, as a starter, with tapas, at brunch, at a lunch buffet or maybe as a snack to welcome your guests.

Method

  1. Wash Bimi® broccoli – and remove any leafs

  2. Cut the filo pastry into strips, so that its length matched the length of the Bimi® broccoli stem.

  3. Use 2-3 strips of filo pastry and put a piece of serrano ham on top.

  4. Put Bimi® broccoli on one side, and roll ham and filo pastry around it.

  5. Put the rolls on a baking sheet and brush some oil over each of them, before baking them in the oven on 180 degrees (regular oven) in approx. 15 minutes. Prep in the meantime the goat cheese dip.

  6. If you think that they are missing some colour, you can turn on the grill function right before they are done (but remember to pay close attention, so that they won't get burned.

  7. To make the cheese sauce, blend all the ingredients into a thick consistency

  8. Season with salt and pepper

  9. Put the dip into a small ovenproof dish and put a bit of honing over the top and bake at 200 degrease in approx. 15 min. until it is golden on the top.

  10. Serve the crispy Bimi® broccoli with goat cheese dip topped with shortly cooked Bimi®broccoli
